Conference Dinner
Our Friday night Conference Dinner will be held in a private dining room at Sydney’s renowned Grana restaurant. Grana Privato is perched on the top floor of Hinchcliff House in Circular Quay, overseen by Grana Head Chef Gigi and chefs Alessandro and Jair. Grana is the Italian word for “grain”, which is at the heart of Grana’s distinctive creations. The Grains used have been sourced from local NSW farms, preferring producers with smaller crops and less common heritage grains – grains that don’t grow quite so easily, that have less intervention, and that require more care. Chefs select grains such as spelt, emmer and khorsan based on their higher nutritional content, and then mill them on-site to produce their own flour which is then used in Grana’s pasta room and pastry kitchen to produce fresh and delicious culinary experiences to enjoy. (Provisions will be made for gluten intolerant and vegetarian guests).
